Beef Jerky Recipe

How to Make Beef Jerky

 

I've been asked several times for my secret family recipe for Beef Jerky.  So with apologies to my ancestors here it is.

 

What you need:

  • 2-3 lbs of beef : I usually pick up whatever is on sale.  I also prefer a bit  of fat on it since this add to the flavor.

  • 8 oz  Soy Sauce:  Not the low sodium kind

  • 8 oz  Worcestershire Sauce

  • 1/2 tbl spoon of Garlic powder

  • 2 tbl spoons of ground black pepper.

  • Dehydrator. An inexpensive dehydrator can be picked up at Wal-Mart or K-Mart for about $40 or buy directly from Amazon.(See the Amazon ad below.)

Put the beef in the freezer until partially frozen.  This makes it easier to cut.  Then with a sharp knife cut the beef into strips about 6 inches long or shorter, 1 inch wide, and 1/4 inch thick.  Sometimes you can sweet talk the store butcher into cutting a rump roast into 1/4 slices, this will make it somewhat easier to work with.

 

Mix all of the ingredients into a large bowl, put the beef into the mix and let set in the refrigerator for 6 to 12 hours.

 

Next place all of the strips of beef onto the dehydrator and dehydrate for 8 to 12 hours.  The beef should be dry but not crisp. 

 

Using a paper towel, pat the excess oils off.  Although Uncle Ralph's Beef Jerky does not require refrigeration, it is best to place the beef jerky in a container and freeze what will not be eaten immediately.
